    FOR THE BEST RESULTS- Season Rindless pork belly all over with the cure Min of 25G per 1kg of Meat. Vacuum seal, place in a ziplock bag or airtight container and refrigerate for 5-10days until the pork starts to feel firm. remove the pork rinse thoroughly and pat dry. refrigerate pork in a rack uncovered overnight. Smoke at 110-120c (225-250f) smoke and cook until the bacon reaches a minimum internal temp of 65c (150f) allow it to cool slice fry and gwt ready for the best bacon you’ve ever tried!! 🐖🔥

    Malcolm's Bird Brine 454g For a Clucking Juicy Bird Never serve a dry, boring Chicken or Turkey again. A good soak using The Bird Brine will make your bird juicy and flavourful. Birds 5kg or larger need a 24 hour bath. Birds under 5kg need to soak for 6-12 hours for maximum flavour. Directions: Mix 1 cup Bird Brine to 3.8 Litres (1 Gallon) of water. (double the recipe for large birds). Place the bird (turkey, chicken, goose, duck, etc...) in a Meat Bag or container of your choice and pour Malcom's Bird Brine mixture over the top. Make sure the bird stays submerged - weigh down with a plate if necessary. Store the bird in a refrigerator or cooler packed with ice for the entire brine time.
